<p>These simple vegetarian Spinach Lasagna Noodle Roll Ups are filled with a creamy mixture of ricotta and mozzarella and baked to warm, bubbly perfection. They are great to make ahead and freeze for busy nights you still want to enjoy a home cooked meal.</p>

  • 12 individual Lasagna Noodles
  • 2 individual beat Egg
  • 2 1/2 cups Ricotta Cheese
  • 2 1/2 cups Mozzarella Cheese, Shredded
  • 1/2 cups Parmesan Cheese, Shredded
  • 10 ounces drain Spinach, Frozen
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Black Pepper
  • 1/4 teaspoons Nutmeg
  • 26 fluid ounces Pasta Sauce

  1. Cook lasagna noodles according to package directions.
  2. In a mixing bowl, mix eggs, ricotta, mozzarella, and Parmesan cheese, spinach, salt, pepper, and nutmeg.
  3. Drain lasagna noodles.
  4. Place 1 cup spaghetti sauce in bottom of baking dish.
  5. Spread approximately 1/3 cup filling over each lasagna noodle, roll up. Place seam side down in baking dish.
  6. Pour remaining sauce over roll ups.
  7. Bake at 375 degrees for 20-25 minutes until hot and bubbly.
