This is a great summer chicken salad with a burst of sweetness from the grapes and explodes with color if you use the red variety. It is so easy to make that you can whip it up in no time for lunch. But it is tasty enough that you can dress it up in some crescent roll bowls and serve it at a baby shower or for entertaining.

You may have mentioned this elsewhere on the site, but I’m still new around here so haven’t noticed it yet; what way would you recommend cooking the chicken for this recipe? I’m guessing you’d use leftovers from something, is there’s a good recipe to use in order to have some leftover for things like this?
This is the best chicken salad ever! I wasn’t sure how well it would go over with my husband and six kids, but I was told (yes, told!) by all of them that I HAD to make it again! I was surprised how the garlic powder that I used really added something to it. Thanks for the great recipe!

Ok, so you can freeze the grapes and they won’t be all squishy after you stir in the mayo?
well, they might get squishy. If that texture is an issue to you (me too) you can leave them out until the time of preparation.

I have already made my chicken salad ( very similar recipe!) and there is now too much left for our family to eat. Can I freeze it with the mayonnaise in the recipe? Thank you!
Great question. While it’s safe to freeze a dish with mayonnaise in it, know that the mayo may separate when frozen, so you may not be happy with the quality of the chicken salad once its been thawed.
The grapes came back better than I expected. I drained the liquid out before adding the mayo after it was defrosted. A new favorite for the freezer.
Depending on the mayo – it may not count as low histamine. The best would be to make your own mayo on the day you want to use it or try cashew mayo.

Of course. IF you are working with that then you would need to make sure that your mayo is the right kind or homemade.
