  • 1 cup slice Onion, Yellow
  • 1 cup Meat Substitute Crumbles
  • 1/2 cups rinse, drain, and cook Quinoa
  • 1/4 cups Pumpkin, Canned
  • 1/8 cups Bread Crumbs
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Black Pepper
  • 1/8 teaspoons Cayenne Pepper
  • 1/4 cups Corn Masa Mix
  • 2 tablespoons mince Chipotle Peppers in Adobo Sauce
  • 1 cup Yogurt, Plain

  1. Grill onion slices on grill.
  2. Combine beef substitute, cooked quinoa, pumpkin, breadcrumbs and seasonings in a mixing bowl or baggie and mix.
  3. Form patties (about 1/4 cup to 1/3 cup for sliders or 1/2 cup for burgers).
  4. Place masa on a large plate and coat patties on both sides.
  5. Heat a skillet or griddle to medium and add olive oil.
  6. Grill in batches according to your pan size and cook 3-5 minutes per side.
  7. Cool on a paper towel-lined plate.
  8. Food process chipotle peppers until powdered and mix into yogurt.
  9. Serve each patty with leaf lettuce, topped each with a generous tablespoon of chipotle yogurt and a slice of grilled onion.
