  • 1 pound Tilapia
  • ¾ cups dice Strawberries
  • ¾ cups peel, pit, and dice Mango
  • ¼ cups dice Onion, Red
  • ¼ cups chop Basil, Fresh
  • 1 tablespoon juice Lemon
  • ¼ teaspoons Salt
  • ¼ teaspoons Black Pepper

Why would I want to freeze this?

  1. Divide tilapia into indicated number of gallon bags.
  2. In a large bowl, combine strawberries, mango, onion, basil, lemon juice, salt, and pepper. Stir well to combine.
  3. Divide salsa into indicated number of quart freezer bags.
  4. Place one salsa bag into each gallon bag. Label and freeze.

Stovetop

These directions help you cook or reheat this meal AFTER it's been frozen for when you are ready to eat it.

  1. Thaw: In fridge
  2. Remove tilapia from freezer bag and cover each side with blackening seasoning.
  3. Heat olive oil in a skillet on stovetop over medium heat.
  4. Cook tilapia in skillet for 3 minutes on each side until cooked through.
  5. Remove from heat and top with mango strawberry salsa.

  1. Heat olive oil in a skillet on stovetop over medium heat.
  2. Cover each side of tilapia with blackening seasoning.
  3. Cook tilapia in skillet for 3 minutes on each side until cooked through.
  4. In a medium bowl while the tilapia is cooking, mix together strawberries, mango, red onion, basil, lemon juice, salt, and pepper.
  5. Remove from heat and top with mango strawberry salsa.

  1. Made this for dinner last night and it was yummy! Both hubby and I want to try it next time with lime and cilantro in place of the lime and basil!
