Tilapia with Mango-Strawberry Salsa

Ingredients

4 servings
  • 1 pound Tilapia
  • ¾ cups dice Strawberries
  • ¾ cups peel, pit, and dice Mango
  • ¼ cups dice Onion, Red
  • ¼ cups chop Basil, Fresh
  • 1 tablespoon juice Lemon
  • ¼ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • 1 tablespoon Olive Oil (serving day)
  • 1 ½ tablespoons Blackened Seasoning (serving day)

Freezer Containers

  • 1 Gallon Freezer Bag
  • 1 Quart Freezer Bag

Directions

Heat olive oil in a skillet on stovetop over medium heat. Cover each side of tilapia with blackening seasoning. Cook tilapia in skillet for 3 minutes on each side until cooked through. In a medium bowl while the tilapia is cooking, mix together strawberries, mango, red onion, basil, lemon juice, salt, and pepper. Remove from heat and top with mango strawberry salsa.

Freezing Directions

Divide tilapia into indicated number of gallon bags. In a large bowl, combine strawberries, mango, onion, basil, lemon juice, salt, and pepper. Stir well to combine. Divide salsa into indicated number of quart freezer bags. Place one salsa bag into each gallon bag. Label and freeze.

Serving Day Directions

Remove tilapia from freezer bag and cover each side with blackening seasoning. Heat olive oil in a skillet on stovetop over medium heat. Cook tilapia in skillet for 3 minutes on each side until cooked through. Remove from heat and top with mango strawberry salsa.
