Ingredients

  • 1 cup Butter
  • 1 teaspoon Vanilla Extract
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 1 individual Egg
  • 1 cup Applesauce
  • 1 cup Rolled Oats
  • 1 cup crush Corn Flakes Cereal
  • 8 tablespoons Coconut, Shredded, Unsweetened
  • 1/2 cups Walnuts
  • 3 1/2 cups Flour, All-Purpose
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt

  1. Cream together butter, vanilla, and sugars until light and fluffy.
  2. Add egg and applesauce and mix well.
  3. Add oats, cornflakes, coconut, and nuts, stirring well.
  4. Add flour, baking soda, and salt.
  5. Place dough in the refrigerator for at least 30 minutes before forming.
  6. Remove from fridge and stir well.
  7. Form into balls the size of small walnuts and place on an ungreased cookie sheet.
  8. Flatten with a fork dipped in water.
  9. Bake at 325F for 12 minutes.
  10. Allow to cool on cookie sheet for a few minutes before removing to cooling rack.

  1. Cream together butter, vanilla, and sugars until light and fluffy.
