- 1 ⅓ pounds quarter Pork Roast
- 1 ⅓ tablespoons melt Coconut Oil
- ⅔ cups dice Onion
- ⅔ cups peel and dice Apple
- 1 ¾ fluid ounces Apple Cider Vinegar
- ⅔ cups Water
- 2 teaspoons peel and mince Ginger, Fresh
- ⅔ teaspoons Turmeric
- ⅓ teaspoons Cinnamon
- ⅓ teaspoons Sea Salt
- 4 medium cook Sweet Potato
- 4 teaspoons Bacon Fat
- ⅔ cups chop Kale

Make It Now Cooking Directions
These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- **Due to the nature of pressure cooking there is always room for inconsistency. The times given here are based on 4 servings fresh. If you are using more servings you may need to increase your cooking time.**
- Place pork roast in the inner pot.
- Mix together coconut oil, onion, apple, apple cider vinegar, water, ginger, turmeric, cinnamon and sea salt.
- Pour mixture over pork.
- Lock lid in place and seal steam nozzle.
- Cook on high pressure for 50 minutes.
- Natural release for 5 minutes then quick release any remaining pressure.
- Shred the pork and add the cilantro.
- Cut part way into each sweet potato lengthwise to open and gently smash down with a fork.
- Divide potatoes cut sides up among baking dishes.
- Divide pork mixture between potatoes (about 1/3 cup per potato). Be sure to spoon extra juices onto the potatoes as well.
- Heat bacon grease in skillet over medium heat.
- Toss the kale into the bacon grease and fry until dark green and crispy.
- Drain kale on a paper towel.
- Top potatoes with bacon and kale.
- Bake, uncovered, at 350 degrees for 20 minutes until heated through.

At first, I though the recipe was strange (sounded like 2 separate recipes accidentally thrown together), but I followed to the T and they were amazing! Next time I’m going to double or triple the kale/bacon mixture. Yum!

How can the same time be required for both the make it now recipe AND the from Frozen recipe ? I am making this tonight from frozen and I am tempted to add 10 minutes to the cook time.
We explain it fully in this article – https://onceamonthmeals.com/blog/series/instant-pot/instant-pot-tips-tricks-201/ – but the cliff notes are – it is going to take longer for the pot to come to pressure with the contents frozen because it is cold and there is more to heat up. As it is coming to pressure it is thawing. Since the pot will automatically take longer to come to pressure you don’t need to manually program it for longer.
How is it 50 minutes for both make it now and frozen? I am making this tonight and I am thinking of adding 10 minutes since it’s feozen.
Ok- we’ve been making this recipe now for a couple of years! My kids CRAVE it. This is going to sound dramatic, but I have to thank OAMM and Instant Pot for literally saving my daughter’s life. After a long period of undiagnosed illness and extreme weight loss (down to 83 lbs at 16 y/o) she was diagnosed with celiac disease. I didn’t know where to start. Per our functional doctors suggestion we went paleo. Being able to meal prep using OAMM Instant Pot Paleo Recipes was a literal life saver. I was able to prep tons of HEALING family meals along with individual size portions for my daughter to take to school and reheat in her Hot Logic mini so she’d never have to struggle to find safe food. This AIP pulled pork is still a fave after being on regular rotation for several years.
