  1. I just buy ground pork or beef and mix my own seasonings in…I just mix in my favorite homemade seasoning mix (my fav is Ras Al Hanout) and call it “sausage”. When you’re making a dish like this, it’s really tough to mess up…I HIGHLY recommend this with an over easy egg on top…if you do eggs. 😀

  2. I have made this for years. Always a favorite! For Trim Healthy Mamas, you can sub butternut squash for the sweet potato and it works just fine. I also prefer to roast the potatoes or squash in the oven at 425 for about 30 min first. They get tender much better I find.
