Could you tell me why you add the water to the eggs before you scramble them? Does it make them fluffier? Make them go further? Freeze better?

You can add milk and that makes them fluffy also. I use whole milk and sometimes evaporated milk.

How much of the onion, peppers, and salsa would I use if I wanted to incorporate? Sorry, I’m new to cooking in bulk 🙂
I would start with a small amount (possibly 1/2 cup total), and then add to it if you like. You can customize to your family’s preference.
Could you reheat these in the Instant Pot? What would that look like for setting and time? and moisture level – would it need to be pot in pot?

Could I add cheese to egg while it is warm, so cheese would melt?
You could, however if you’re making these to freeze, the cheese will melt when reheating them in the microwave.

If you wanted to make 1 or 2 burritos for yourself, then you could just cook a couple eggs in the microwave. You would break the eggs into a microwave safe bowl, then add a tbsp of water or milk. Mix them up with a fork (or small whisk) to break the yokes and add a sprinkle of salt & pepper. You can microwave them about 10 seconds at a time. Be sure to cover the bowl with a napkin or paper towel, so nothing splatters in the microwave. After 10-15 seconds, check them and stir the eggs. Continue cooking at 10 second intervals till eggs look done. Then put them on your tortilla/tortillas and add a little shredded cheese on top. Next, fold up your tortilla or tortillas and enjoy.
Must you thaw these burritos if reheating in oven?
Hi Sabrina! No, you don’t need to thaw. You probably could get away with it in the microwave too – but it may make the tortilla a bit tough. You can also heat them in an air fryer if you have one. We’ve had great success with this method – it’s fast and they taste great too!
