I am feeling MUCH better about my menu plan this week after having completed the July cooking day. What a relief to have some quick, easy, nutritious meals in the freezer for when I just don’t feel like cooking (or don’t have the time). The August menu is planned and posted too so I am looking ahead to the great things the next month will bring also.
Menu Plan Monday
- Monday – Our favorite pasta – noodles, garlic, Parmesan, Eggplant Bake
- Tuesday – Company – Spicy Honey Chicken (July menu), summer squash pasta salad, garlic oven fries
- Wednesday – Dinner with church friends
- Thursday – Chicken Rice Casserole (July Menu), Sauteed Squash (Happy Box)
- Friday – Company – Marinated Flat Iron steak, baked beans, corn on the cob (Happy Box)
- Saturday -Brunch – Raspberry Coffee Cake (July Menu), fresh fruit (Happy Box), bacon
- Dinner – Cannelloni (July Menu), garlic bread, salad
- Sunday – Lunch – BLT’s, corn on the cob, french fries
- Dinner – Ham, green beans, potatoes
