Let me start by saying I didn’t name this post “Crazy Vegetarian Family Edition” because our family is crazy (though that’s often true, as well) but because the end of February is really crazy for our family.
Our 3-year-old’s birthday was last week. And thank you so much to those folks who helped me pick out a recipe for her birthday cake; she absolutely went crazy for her Hello Kitty Meyer Lemon Cake (and everyone else at the party loved it, too. It was delicious).
Of course Valentine’s Day was the week before and now, this Wednesday (yes, Leap Day) is our wedding anniversary. Our first, to be technical about it, though we’ve been married four years. This is our first ACTUAL anniversary, since it falls on the 29th.
Menu Plan Monday
Monday –
- Toddler Lunch – chickpeas, sliced summer squash and tortillas
- Dinner – Spinach Meatballs with Marinara a la Seaton over pasta
Tuesday –
- Toddler Lunch – Chickpea Broccoli Alfredo
- Dinner – Vegan Taco Bar and Spicy Guacamole
Wednesday –
- Toddler Lunch – Taco Salads
- Dinner – I have no idea! We’re heading to a local farm-to-table restaurant for our anniversary while the neighbors watch the kids. Party time!
Thursday –
- Toddler Lunch – Healthy Breakfast Cookies and Homemade Yogurt
- Dinner – Leftovers
Friday –
- Toddler Lunch – Sourdough Bagels made into Bagel Egg and Cheese Sandwiches
- Dinner – Mozzarella Cheese and Basil Pizza (with Kelly’s Homemade Pizza Dough and Marinara a la Seaton). We are seriously addicted to this pizza dough. We bought a pizza stone recently (so worth it by the way) and have been going crazy on pizza.
Saturday –
- Lunch – Pumpkin Biscuits
- Dinner – Stuffed Pepper Stew
Sunday–
- Lunch – Salads with Homemade Bleu Cheese Dressing
- Dinner – Millet and Bulgur Risotto
