I definitely prefer the writing out my menu plan in advance instead of what we had the previous week. I thought as a food blogger that plan would work well because then I could link to recipes I created. Not so much. 🙂 It usually lent itself to not having much of a plan at all which isn’t good for anyone. I did find that I cooked a few more recipes from the internet than I had intended though. I had a play date at my house and I always feel a bit of pressure to make something good. (I don’t want to let my reputation slide.) And I was testing out a few things for future menus. I also made some meals to take to a few families because it seems everyone I know is popping out babies these days! (Not a bad thing, just definitely need a freezer full of meals to keep up.) We also picked up our pork from the National Pork Board which meant that we had to use it up or freeze it. I wanted to do a little of both. So I made the below with some of it. Here are the items that I made last week that I wasn’t expecting to make:
- Our Best Bites Fried Rice – Yum!
- Organic Raspberry Kiwi Acai Smoothies (I’m adapting these and will post the recipe soon) – they were SO good and so addicting. I immediately went out to buy supplies to make more.
- Bacon-Wrapped Pork Chops with Garlic Mustard Butter with Homemade Mac & Cheese and peas
- Cheeseburger Boat and Broccoli & Cheese Twice Baked Potatoes which I took to Jenny for dinner one evening.

Menu Plan Monday
And here is what we have on the agenda this week. In addition to these items, I am going to do some batch cooking each day to try to get ahead on all these meals I need to make to take to others. Each day I have chosen one item to mass cook and freeze. Monday – Slow Cooker Chicken Stew with Peppers & Pineapples, rice, eggrolls (We didn’t get to this meal).
Batch cooking – spaghetti O’s for the kiddos (will share recipe soon)
Tuesday – Macaroni Chicken Bake, salad, easy garlic bread – also didn’t get to this last week
Batch cooking – boneless chicken for a variety of meals
Wednesday – Our Best Bites Fried Rice – Yep, it was so good I am taking it to a church gathering this week!
Batch cooking – none, off at a coffee shop working on this here blog 🙂
Thursday – leftovers
Batch cooking – Toddler French Toast Sticks
Friday – Chili Cincinnati Style – over noodles and loaded with cheese and onions!
Batch cooking – baking potatoes and making another variation on the Twice Baked Potatoes
Saturday – Brunch – Bagel Egg Sandwiches, fruit, yogurt
Dinner – Beef Stroganoff, egg noodles, green beans
Sunday – Lunch – leftovers
Dinner – Marinated Steak with Broccoli & Cheese Twice Baked Potatoes and a salad

I’m right there with Jamie on wanting that Spaghetti O’s recipe and I’ll confess it’s for me! Thank you for sharing your batch cooking approach – I’m looking to do more of that myself so it helps to see how someone with experience integrates it into weekly planning.
