October is Vegetarian month and also VeganMoFo (Vegan Month of Food), where more than 800 bloggers pledge to post vegan meals throughout the month.
I’m participating for the first time this year over at Veggie Converter and while it’s certainly been challenging at times (I’m normally a not terribly finicky vegetarian who chooses not to eat meat just because I don’t like it), it’s also been a lot of fun to try new things and experience the ins and outs of a more strict meat, egg, and dairy-free diet.
So, this week my meal plan is full of vegan delights for dinners as well as a few vegetarian treats for lunch as VeganMoFo nears its end.

Monday –

- Dinner – Slow Cooker Taco Soup {Vegan}
Thursday –
- Toddler Lunch – Taco Roll-ups {Vegan}
- Dinner – Green Bean Carbonara {Vegan}
Friday –
- Toddler Lunch – Buffalo Chickpea Pizzas
- Dinner – Vegan Arroz con Pollo
Saturday –
- Toddler Lunch – Black Bean Salsa Quesadillas
- Dinner – Vegan Slow Cooker Lamb Curry
Sunday –
- Toddler Lunch – Vegan Bacon Cheesburger Soup
- Dinner – Vegan Bacon Persimmon Pasta
