This weekend I had one of THOSE talks with my husband–in which I whined about being exhausted from constantly preparing food. Maybe it’s just that stage I’m at right now–breastfeeding a newborn, watching my diet to lose pregnancy weight, feeding picky toddlers, on top of planning dinnertime.
Do you ever find yourself in this kind of rut? When I’m feeling this way, the solutions that bring me sanity are keeping prepped meals in the freezer, and pre-planning our weekly meals. Oh, and tagging my husband with the dishes. Here’s what’s on our menu this week:
Menu Plan Monday
Monday –
- Toddler Lunch – Mini corndogs, yogurt, orange wedges
- Dinner – Sweet and Sour Meatballs over brown rice (from Feast in 15)
Tuesday –
- Toddler Lunch – homemade “lunchables” turkey slices, string cheese, crackers, apples
- Dinner – Taco Salad
Wednesday –
- Toddler Lunch – English muffin pizzas, celery with peanut butter
- Dinner – Buffalo Chicken Stuffed Shells, green salad
Thursday –
- Toddler Lunch – lunchdate with daddy
- Dinner – Chicken Quesadillas, Southwest Rice and Beans
Friday –
- Toddler Lunch – macaroni and cheese, apple slices
- Dinner – Movie Night; pizza, baby carrots, popcorn
Saturday –
- Lunch – leftovers
- Dinner – Date night
Sunday –
- Lunch – Beef Stew
- Dinner – Fluffy Whole Wheat Pancakes, scrambled eggs
