A little wrench was thrown into my plan this week. Being a new working mom, I have been out of the game when it came to holidays other than “the big seven” for time off from work.
When I picked up my son from daycare/school on Friday I realized that today (Monday) they were having an in-service day for Columbus Day. Oops! I luckily have vacation time and I’m fortunate to be able to work from home to cover the day off. However I didn’t really account for the fact we would both be eating at home today.
Thankfully I found meals in the freeze to get us through the rest of the week!
Menu Plan Monday
Monday –
- Toddler Lunch – Apple Chicken Nuggets with peaches
- Dinner – Panzanella Salad with a light green salad
Tuesday –
- Toddler Lunch – Mac and Cheese
- Dinner – Monterrey Chicken with corn on the cob
Wednesday –
- Toddler Lunch – School
- Dinner – Beef Chimichangas with tomato salad
Thursday –
- Toddler Lunch – Apple Chicken Nuggets with pears
- Dinner – White Chicken Chili with cornbread
Friday –
- Toddler Lunch – School
- Dinner – BBQ Chicken Pizza
Saturday –
- Lunch – Leftovers from the week
- Dinner – Taco Soup with tomato cucumber salad
Sunday –
- Lunch – Grilled Cheese with Tomato Soup
- Dinner – Seaton Roast Chicken with mashed potatoes and green beans

She’s not super picky but I’m really picky about giving her wholesome, minimally processed foods. I LOVE the apple chicken nugget recipe. So excited to try these out!!!
