Chicken Casserole

Ingredients

1.5 cups carrots

0.5  cup sliced leeks white part only

5 ounces chicken breast cut into chunks

1 pound potatoes peeled and chopped

1 cup peeled and chopped parsnips

Directions

1. Place chicken in pot and cover with water. Boil until cooked through. About 20 minutes.

2. Add the potatoes, parsnips, carrots and leeks. Continue boiling for another 15 minutes, or until everything is tender and cooked through.

3. Blend to a puree, adding water until desired consistency.
