Chicken with Sweet Potatoes and Apples (8+ months)
Ingredients:
2 sweet potatoes (about 1 pound), peeled and diced
2 medium Gala apples, peeled and diced
1 large chicken breast
1 small yellow onion
Directions:
In a stock pot, boil chicken breast whole and onions with just enough water to cover, until chicken is done and juices run clear.
Remove about half of the onions and discard (I did just to be on the safe side-in case the taste was too strong for Carter). Add sweet potatoes and apples to boiling water and continue boiling until the sweet potatoes are soft.
Pull out chicken breast and dice, puree the chicken first, then add the rest of the ingrediants adding the water a little bit at a time until desired consistency. (I ended up using all the water in the pot). By doing the chicken first, you won’t have to over-puree the sweet potato, causing it to get gluey.

Join the discussionGood call on the onion I made this recipe a month ago (from Annabel Karmel’s website) an the onion was too strong. I even mixed the “stew” with more sweet potato to dilute it but my son still didn’t like it. Next time I’ll reduce the onion quite a bit!
I am excited to try some of these “big kid” recipes now that Libbie is 8 months (tomorrow!). It’s amazing how exciting feeding our kid can be. Ha.Jessie
