One of the first foods I ever made for Shep was mashed sweet potatoes. He would finish two cubes and then bang on his tray for more! Below is the very simple recipe I made him, plus squash for a little Autumn-ness.
Yield:
2 ice cube trays/ 32 oz/ 64 T
Ingredients:
- 1 large butternut squash
- 2 medium yams or sweet potatoes
- 1 T brown sugar
- 2 oz. formula or breast milk
Directions:
- Preheat oven to 400 F
- Wash outside of squash and yams
- Cut the squash in half and poke holes in the yams (so steam can escape without exploding the yam.)
- Dig out all the guck in the squash (save seeds if you want- can be roasted.)
- Place squash (meat sides up) into a pan. Pour about an inch or two of water around the outside of the squash (helps with cooking.)
- Place pan in oven, and put yams directly on rack on either side of the pan.
- Cook for one hour until meat of squash is tender.
- Remove from oven and allow the veggies to cool before you handle them.
- Scrape squash and yam flesh into a large mixing bowl.
- Add brown sugar and formula.
- Hand mash with a potato masher until desired consistency. (This can also be done in a food processor or food mill for a finer mash.)
*You can ice cube tray this up to 4-6 months, but if your baby is anything like Shep, it will probably last only a couple weeks!
