Sunday Salads: Raspberry Pear Romaine Salad with Raspberry Dressing

Beautiful salads really can set off a meal in a positive way, can’t they? Don’t you just love the look of a fresh summer salad bursting with ready to eat produce? Even if the rest of my meal doesn’t feel gourmet, my salads seem to set the stage for beauty at the table. sunday saladsThis Raspberry Pear Romaine is one of those salads. It is bursting with summer excitement. Raspberries, pears, feta, romaine and all topped off with a raspberry dressing. I think that you will find that this salad is a great addition to your dinner table or to a large gathering of friends.

Raspberry Pear Romaine Salad with Raspberry Dressing

Raspberry Pear Romaine Salad Ingredients:

1 bag Romaine Lettuce (or 2 bunches, chopped)

1 pint Raspberries

1 medium Pear, diced

4 tablespoons Feta Cheese

Raspberry Dressing

Raspberry Dressing Ingredients:

1.33 cups Raspberries, or frozen raspberries thawed

2 tablespoons Sugar

1 tablespoon Cider Vinegar

.33 teaspoon Salt

1 teaspoon Dijon Mustard

2.5 tablespoons Grape Seed Oil

Directions:

Toss together all ingredients for salad mixture except Raspberry Dressing. To make Raspberry Dressing, add all listed dressing ingredients to a food processor, process until well combined. Pour dressing over salad (or toss) just before serving.

  1. This looks really good. I tried something similar and the dressing ruined it(store bought)I don’t know why I am so intimidated with making my own. Maybe I will try to make this one because it sounds very fresh tasting. Thanks

    1. Michelle, it was so EASY. I was done in 5 minutes with the dressing. It took me longer to cut up the salad. And most dressing recipes don’t make nearly the amount you buy in a bottle so there is less guilt over wasted dressing that doesn’t taste good. Oh yea, and making it is cheaper too. I know you can do it.

        1. Yes, it is usually with all the other oils at the grocery store. You can use olive oil as well.
