Menu Plan Monday
I’ve got to say, I am having MPM block! I sat down to write the post and literally said to my husband, “I don’t know what I want to cook this week.” Really, I have NO CLUE. I think I am in a “funk” because I can’t eat red meat. And when I say can’t, I mean that I get very sick (pregnancy) whenever I do. Even though I crave it. So it has been a little challenging for me lately.
- Monday – Slow Cooker Chicken Stroganoff, Egg Noodles, Mashed Potatoes, Corn (yes, we LOVE starch)
- Tuesday – Date Night – Out to dinner
- Wednesday – Church Night – dinner with friends
- Thursday – Roast with carrots, potatoes and onions from the Happy Box (yes, I am aware this is red meat, we are going to chance it to see if it is a ground beef issue)
- Friday – Baked Chicken Burgers, pickled beets, french fries

I love Monday’s sides! DH wouldn’t think twice about serving that many starches, but I know we need more variety, so it’s up to me to serve something green.Thanksgiving Day is the rare exception where I purposely prepare multiple starches. Homemade egg noodles, mashed potatoes and rolls are always there. Lately we’ve dropped the dressing and had corn casserole instead. It’s no wonder we’re sleepy after dinner.
I’ve had trouble figuring out the sides latey. Can’t seem to come up with anything on my own. Thank goodness for the “veggies” and “salads” sections of my cookbook!I had a terrible aversion to pork when I was pregnant with my first child. Couldn’t stand it at all! I’d try preparing it in different ways–baked, broiled, grilled, saute’d. Didn’t matter, it all wanted to come right back up. Fortunately, the aversion went away after the baby was born.Good luck with your roast!
