Inside Out Apple Crisp

Apple crisp is a favorite dessert in our house so when I saw this recipe for inside out apple crisp, I was intrigued.  A bonus was the fact that this dish was prepared in the crockpot and required no chopping and peeling of apples.  The apples came out nice and soft, like applesauce and the maple syrup gave a nice touch of sweetness.  If you are preparing this dish for a baby you can scoop out the insides and mash or puree to the consistency your baby needs.  Or, the whole family can enjoy this dish as a dessert topped with vanilla ice cream or frozen yogurt.  Delicious!

Inside Out Apple CrispIngredients:

  • 1/2 cup rolled oats
  • 1 teaspoon ground cinnamon
  • 4 medium apples, cored
  • 1 cup water
  • 1 tablespoon maple syrup

Directions:

Mix the rolled oats and cinnamon together in a small bowl.  Place the apples on a plate then fill the apples with the filling and drizzle maple syrup over the tops of the apples.  Put the apples carefully into the crockpot.  Pour the water into the crockpot but not over the apples.  Cover and cook 2.5 to 3 hours on low heat until the apples are soft and begin to collapse.  Scoop out apple flesh and mash or puree in a food processor or blender.

Freezing Directions:

Transfer mixture to a nonfreezer gallon bag. Cut a small hole in the bottom corner of the bag and use it to pour/squeeze the purees into ice cube trays. DO NOT OVERFILL.  Only fill each cube up to the sides and not overflowing the sides. Cover each tray with aluminum foil and label.  Freeze for at least 24 hours before transferring to quart or gallon freezer bags for long-term storage.

Servings: 4 child portions or 16 baby food cubes
