Copycat Smart Ones Fire Roasted Vegetable Soup
Lunch is one of the most difficult times of the day to get a good meal in my stomach. I pack lunches for the kids and the husband, but always seem to forget about my own. By the time the clock strikes noon, my belly is growling, and I am quickly reaching the “hangry” (hungry + angry) phase. So I decided to recreate a freezer aisle favorites – Copycat Smart Ones Fire Roasted Vegetable Soup – to fit my life!
For me, driving through the local fast food joint isn’t an option, because I have Celiacs Disease, and our rural community doesn’t have a lot of offerings. The frozen food section of our local grocery store isn’t much better, and I try to steer clear of all of the preservatives and things I can’t pronounce on the labels.
So, as you can see, having my freezer stocked with gluten free options for quick and easy lunch prep is a must. The roasted vegetables in this soup add amazing flavor and it is low in points. It takes just just a few minutes to reheat, so it is just as easy at lunchtime as a meal from the freezer aisle, but I can pronounce every ingredient.
