This week is no doubt going to be a busy one! The Once A Month Mom Tweet-Up is on Saturday night (there are still a few in-house slots and plenty of Twitter space for everyone) which means my to-do list is unusually long this week. And my time in the kitchen, unusually short. But here is our plan for the week.

This is pretty much a repeat from last week. Because let’s be honest here, I was WAY TOO sick this last week to ever think about cooking (or defrosting) anything. It was pretty much chicken noodle soup and grilled cheese for us most of the week. Hopefully this week will mean back to the regularly scheduled meal plan.

Folks, this is a crazy week for me. I can’t say there is going to be much in the way of cooking around here (good thing I have goods in the freezer). Here is what I think our plan is for the week.

Originally this was going to be an “easy” week for me but it has quickly filled up with things to do during the day. Good things, but things. So I am happy that I have lots of freezer meals so I don’t have to worry about dinner.

This is definitely a short week for me to plan meals. We are headed out of town, together, without the little one this weekend so no menu planning for me over the weekend! However, I do need to use up some of these freezer meals.

I don’t know about you, but I really struggle with all of the browning of ground meat on our cooking days. It just seems like it takes two gigantic skillets to cook most of the meat and even then it ends up all over the stove. I have often wondered if there is a better way. Well, I think I might have found one!
